Bacon & Tomato Spread


This is my contribution to our family New Year's Party. My mom first started making this a few years ago after she had it at a friend's house. It has since become a family classic. It is super yummy and super easy to make. The "full fat" recipe below is the classic, but I have made it with turkey bacon, low fat mayo and cream cheese and have no complaints. Serve on French Bread (directions below) or any crackers.

BACON SPREAD

1 8 oz. package of cream cheese softened

1 lb. Bacon cooked crisp; cut into small pieces – reserve 1 tbsp of fat.

LARGE tomato – diced small cubes

½ cup mayonaise

Pepper to taste

Mix together and chill. (I use a hand mixer for the cream cheese and mayo and a spatula to get the rest mixed in.)

Serve on French bread sliced and toasted*

*slice bread, brush each side with olive oil & toast under broiler until golden brown. Watch carefully so as not to burn it.
